Introducing a Systems Approach is the key. Most people accept that computer systems need to be based on compatible component products, and the same applies with infection control. Most clean kitchen surfaces are covered in a very thin film of detergent, but what most people do not know is that most detergents inactivate most antibacterial products. So even though those antimicrobial products work in the laboratory they have very little chance of working in the average kitchen.
